ESTIMA
In our opinion, Estima has become the most popular general purpose catering potato among hotels and restaurants. Estima has a smooth skin, pale yellow flesh and a texture that is very slightly on the waxy side. Although many of our customers use Estima equally for boiling, roasting and mashing, we consider Estima to be the best mashing potato we supply – producing a creamy, medium-weight mash. Supplied washed or unwashed.

WILJA
Wilja is nowadays quite a well-kept secret among discerning housekeepers and chefs – having been dumped by the supermarkets in favour of Estima in the 1980s. It is another general purpose white like Estima, but with a waxier texture, a rougher skin and a stronger flavour. Wilja taste of the soil they grew in, and because of their waxiness, they don’t easily break down when boiled for a few minutes too long. Good for putting in pies and pasties, Wilja makes a medium-to-heavy mashed potato

KING EDWARD
This is the ultra-traditional English potato, with a white skin and red eyes. King Edward is the most floury potato we grow, and we consider it to be the very best for roasting - with many of our chefs mentioning the variety’s name on the menu alongside roast beef. Also very good for producing a traditional lightweight and fluffy mash.

MARIS PEER
General purpose white potato with a hint of sweetness. Maris Peer is closely related to Maris Piper, and is distinctly on the floury side. As a result, it chips and roasts well, and will do most of the jobs King Edward does – and at a lower cost, as it’s an easier potato for us to grow. Arguably the best chipping potato we produce, though pushed hard by King Edward and Desiree.
This years crop has an amazing skin finish.

DESIREE
Desiree is the world’s most popular red potato, with a red skin and a brilliant white flesh. It is general purpose, more floury than Estima, has a nutty flavour and enjoys a substantial following among chefs. Makes a light mash – about the same weight as Peer – but not as light as King Edwards. Also good for chips.
Supplied washed or unwashed.
