Budget Potatoes
There is a killing ground in the middle of every potato crop. Let me explain. After harvest, potatoes are graded according to size, and more specifically according to their diameter, measured in millimeters.
Little salad potatoes are described as 20/40, meaning that their diameters vary between 20mm and 40mm. General boiling / mashing / roasting potatoes are 55/70 and have diameters of between 55mm and 70mm, and anything larger than that will probably be described as a baker.
This leaves a portion of the crop whose size falls between 40mm and 55mm. These are too big for salad potatoes and ideally too small for boiling / mashing / roasting – because they take too long to peel – and this can be an important consideration in hard-pressed restaurant kitchens
This year, for the first time, we will be delivering 25kg bags of 40/55 material, referred to as Budget Estima, Budget Wilja, Budget King Edward, and so on. The price will be extremely low, and they will appeal to chefs on a tight budget and those prepared to serve a boiled or roast potato in its skin (where most of the goodness resides, anyway).
